Popcorn Cauliflower

You can find lots of recipes online for chicken wings made with cauliflower. Here’s a popcorn chicken recipe with cauliflower. (You can also make it with cut up Gardein chicken scallopini, Beyond Chicken strips, Trader Joe’s chicken strips, etc)

Cauliflower florets, popcorn chicken sized

Marinade:

1/2 cube Not-Chicken Bouillon

1/3 cup Water

1/3 cup Trader Joe’s veggie broth

2 tbs butter

A pinch of miso

1 tbs soy sauce

1 tbs white vinegar

1 tbs Nutritional Yeast

1 tbs Rosemary

1/2 tbs Paprika

1 tbs Old Bay

1 tsp white sesame seeds

1 tsp Sage

Dredge:

Follow Your Heart “egg

Breading:

Plain breadcrumbs

Some cornmeal

Spices from marinade
Dipping sauce:

1/4 cup Ketchup

2 tbs Canola oil

1 tbs Just mayo

2 drops tabasco

Smoked salt
Cut cauliflower into popcorn chicken sized bits

In small saucepan over medium heat, combine water, bouillon, butter and veggie broth. Cook until butter is melted and bouillon is dissolved. Remove from heat. Mix all marinade ingredients well and pour into a ziploc bag with the cauliflower florets. Massage bag and marinate in fridge at least a day.

In a shallow, wide bowl or tray, prep Follow Your Heart egg according to package instructions. In another tray, prep breading mixture. In a third tray, pour a bunch of flour. Strain florets (don’t rinse!). Roll in flour, dredge in FYH egg, roll in breading mixture and fry. Shake some more kosher salt over the chicken right when you take out of of the fryer. It’s good to salt things while they’re hot.

Make dipping sauce by whisking all ingredients with a fork.
