Next Level Grilled Cheese

You know on cooking shows, when chefs take a bite out of a sandwich they just made and go “MMPH!”? This is that sandwich. I call my take on an elevated grilled cheese the BAMwich. It’s a bacon, avocado and mozzarella grilled cheese sandwich.

Three umami-packed ingredients take this way beyond your childhood grilled cheese

Yes, I recognize that that is a picture of cut up hot dogs. I use Lightlife Smart Dogs to make the “bacon” bits for this recipe. The company also makes soy bacon, but I like to use their hot dogs in recipes such as this sandwich and pasta carbonara (which I will be making soon!).


2 slices Bread Alone Peasant Bread (or any rustic-y loaf)
1 Lightlife hot dog
1 black (ripe) avocado
Daiya mozzarella (or any creamy, white/mild dairy-free cheese) to taste
Earth Balance butter
Canola oil

Optional: sage and liquid smoke. Even more optional: Magic Vegan Bacon Grease

You can adjust ingredient amounts to your taste!

Pulse hot dog in blender into bacon bits, cook these in a small pan on low to medium-low for about 4 minutes in canola oil with sage and no more than a drop of liquid smoke. Or you can fry them in the MVBG, if you have it.
Lightly butter one side of each slice of bread.
On the non-butter side of a bread slice, make a layer of mozzarella cheese. Spread it well because this is your glue. Now layer on the bacon bits and then some more cheese. Close up the sandwich and butter again (both slices of bread should have butter on the outside).
Cook in a nonstick pan for 2 minutes on medium low to get a crisp then 2 minutes on low to continue melting cheese. Flip and repeat.
While sandwich is cooking, dice the avocado.
When sandwich is done, remove from heat. Open carefully and add avocado. Mash the avocado if you want.
Close up sandwich and press down. Best served cut in half and would be nice with crispy, flaky french fries.

Don’t forget to say MMPH when you bite into it!
