Quick, Delicious Lunch

Lentils get such a bad rep! People think they’re nothing special, but they’re super delicious, super healthy, and super simple to make. I just made this recipe in under 5 minutes and it’s soo yummy! I know the picture isn’t as #foodporn as some of the other photos on this blog, but just trust me and give this a try! 

Ingredients:

1 cup Precooked Brown Lentils (you can buy packets of these at Trader Joe’s) 

Mirepoix

    1/4 small Onion

   1/2 stalk Celery

   1 small Carrot

1 medium clove Garlic

2 tsp Thyme

2 tbs Olive Oil

1 tbs Parsley

Dash oregano
Process

Mince all the mirepoix ingredients and the garlic.

Heat olive oil in the pan on low and sauté mirepoix for about 4 minutes. Add garlic and sauté another minute. 

Add lentils and spices and toss. Cook on medium for 3 minutes, stirring. 

Serve alone or over rice.
