Spaghetti a la Carbonara

For this recipe, use the highest-quality vegan pork you can find. For me, this means Lightlife soy hotdogs. Lightlife also makes soy bacon but the hot dog is fattier and more similar to the traditional guanciale. Cubed and sautéed in Vegan Magic bacon grease, the hot dog works as the fatty, slab pork element of the dish. A true Italian chef would probably have me arrested for using hot dogs in carbonara, but you have to work with what you have! Think of it like a Chopped challenge! 


Handful spaghetti

2 Follow Your Heart Eggs

1/3 cup cubed vegan pork 

2 tsp Vegan Magic bacon grease

1/4 cup grated dairy-free parmesan, I used Daiya

Black pepper

Cook the spaghetti according to package instructions in generously salted water. Make sure to reserve 1/4 cup pasta water before draining.

Cube the pork and sauté in the bacon grease until cooked and very slightly crispy.

In a bowl, prepare the Follow Your Heart Egg according to package instructions and whisk in the cheese.

Add the reserved pasta water and the drained spaghetti to the bacon pot on medium-high heat. Shake the pan and allow some water to evaporate.

Remove from heat and QUICKLY mix in the egg and cheese mixture.

Return to medium-low heat and toss for a few minutes.

Crack black pepper into pan and toss.
