Hijack a basic box of mac and cheese to make something flavorful and decadent!
Box mac and cheese (I used Daiya cheddar, you can use any dairy-free)
1 tbs Vegan Magic Bacon Grease
1/2 shallot, minced
A pinch of white miso
Prepare mac and cheese according to box instructions. Make sure you heavily salt the pasta water (and use soymilk not water to make the sauce with the powder, if not using Daiya).
Stir in shallots and bacon grease.
The box says it makes two servings — trust me, it’s one.
