Mini Tortillas

Much faster and easier than making a full size tortilla but just as tasty!

Ingredients: (makes three mini tortillas)

1 Follow Your Heart Egg, prepared

1 yukon gold potato, roughly peeled

1 chunk of onion, equivalent to about half to two-thirds the amount of potato

1 tablespoon melted Earth Balance

Salt and pepper

Parsely (optional, looks pretty)

Microplane potato and onion into the prepared egg. Add seasonings and butter. Whisk together and evenly distribute into a muffin tin. In a toaster oven, cook for 10 minutes at 350°F.

Broil for 5 minutes at 375°F.

Cook longer if you like it browner and crispier.

(Add more time if using an oven)
