Toasting the couscous gives it a sweet, nutty flavor which is balanced by earthy chickpeas with spices.
Ingredients (for one)
3/4 cups couscous
1 tbs Earth Balance butter
1 cup water
1 tbs olive oil
2 tbs tomato paste
2/3 cup chickpeas, drained and rinsed*
1 tsp smoked paprika
1 tsp cumin
In a pot, bring one cup of water to boil with salt. Meanwhile, melt butter in a separate pot. Add couscous, stir to coat with the butter, and toast over medium heat until water boils. Carefully add boiling water to couscous pot, cover and let sit for at least five minutes.
Drain and rinse your chickpeas. Combine chickpeas, olive oil, tomato paste, paprika, cumin, and an optional chunk of onion and/or garlic (be sure to remove the chunk at the end). Cook on low heat to allow flavors to come together, at least five minutes. Now combine the couscous with the chickpea tomato sauce. You can either mix the chickpeas through or serve them on top of the bed of couscous. Serve warm.
